Quick Margherita Pizza (single serving)

Spring has officially sprung and bright, fresh herbs are a great way to liven up your weeknight dinners. Many grocery stores have started selling potted, fresh herbs in the produce section, so this is a great and convenient way to get your hands on some. Try replanting them in a decorative pot or even in large mason jars. For spring and summer fare, I recommend buying basil, cilantro and mint. Basil is great to include in pizza and pasta recipes, cilantro can be mixed into avocados with tomatoes and red onion to make a simple guacamole and mint can be tossed into a fresh fruit salad to make it extra special. Try this simple pizza recipe sometime!
