Meatless, heart healthy chili
Saute onions in a small amount of water or broth for 10 minutes. Add all peppers and cook an additional 10 minutes. Then add garlic and cook 5 more minutes. Add more water/broth as needed.
Add all other ingredients EXCEPT cilantro and bring to a boil. Reduce heat and keep a rolling low boil for 30 minutes. Remove from heat and stir cilantro into warm chili.
If you're a fan of cheese and sour cream in your chili, add a dollop of Greek yogurt. You will be amazed at how great it tastes!
