Green Bean Casserole
Love green bean casserole, but hate the calorie count? Try this healthy makeover of your holiday favorite.
- 2 pounds fresh green beans
- 1 tbsp Extra virgin olive oil
- 1 clove garlic
- 3/4 cupo walnuts (chopped)
- 1/2 tbsp dried Rosemary
- 1 oz crumbled goat cheese
- 1 dash salt
- black pepper to taste
Steam or boil green beans until crisp-tender and vibrant green (About 3-4 minutes)
Drop beans in large bowl of ice water to stop cooking process
Heat oil in large skillet on medium heat. Add garlic, onions, orange zest and walnuts. Sautee for about 1 minute.
Add green beans to skillet with garlic mixture. Sautee until warm through (about 3 minutes). Add salt and pepper.
Remove from skillet and plate. Top with crumbled goat cheese and serve.
